Yucca Hash Browns

Ingredients:

  • Yucca root

  • Olive oil or cooking spray

  • Salt and pepper

  • Optional: onion powder, garlic powder, paprika for added flavor

  • Optional toppings: sour cream, salsa, chopped green onions

Instructions:

  1. Peeling and Preparing Yucca:

  • Peel the yucca root and cut it into manageable chunks.

  1. Grating Yucca:

  • Use a box grater or a food processor with a grating attachment to grate the yucca.

  1. Squeezing out Excess Moisture:

  • Place the grated yucca in a clean kitchen towel or cheesecloth.

  • Squeeze out excess moisture from the yucca.

  1. Seasoning the Mixture:

  • Place the squeezed yucca in a mixing bowl.

  • Season with salt, pepper, and any optional seasonings you prefer, such as onion powder, garlic powder, or paprika.

  1. Forming Hash Browns:

  • Take small portions of the yucca mixture and shape them into hash brown patties.

  1. Cooking the Hash Browns:

  • Heat olive oil in a skillet over medium-high heat.

  • Carefully place the yucca hash browns in the skillet, ensuring they are not too crowded.

  • Cook until the bottom side is golden brown and crispy, then flip and cook the other side.

  1. Draining Excess Oil:

  • Place the cooked yucca hash browns on a paper towel-lined plate to drain any excess oil.

  1. Optional: Keep Warm in Oven:

  • If making a larger batch, you can keep the cooked hash browns warm in a low-temperature oven.

  1. Serve and Enjoy:

  • Serve the yucca hash browns hot with your favorite toppings such as sour cream, salsa, or chopped green onions.
